Hey guys,

I'm sure you've all heard of Acai bowls, they have become quite the craze and for good reason! Acai bowls are absolutely delicious and I am totally obsessed with them! I would love one to buy one for breakfast every day but unfortunately they are usually around $10 each, which isn't budget friendly for an everyday breakfast. So I decided to start making my own and thought I would share the delicious recipe with you!

What is Acai?
Acai (Ah-sigh-ee) is a little berry that's like a cross between a blueberry & a grape and has heaps of health benefits. Acai berries are full of antioxidants, even more than blueberries, and they are found growing in the amazon. These berries are low in sugar which also makes them better for you than some other berries, but they are definitely not as sweet. Due to all it's supposed health benefits and promises it has been labeled a super food. Because these tiny little berries are grown in the amazon, we can only get them here frozen.

I purchased my Acai from Mrs Flannery's, you will find it in the frozen section and it should be around $10 for a pack of 4 frozen sachets. With the recipe below this will be enough for about 6 serves (depending on how big you like your servings. Sue, if you are reading this - you will probably only get two servings out of this recipe :-P )

I like to make it all at once, which I find helps the acai mix go further and it also means I have a healthy breakfast already prepared for me everyday.

Here's what you will need:

  • 4 x  Acai Pure (not sweetened) Sachets
  • 4 x Banana's (fresh or frozen)
  • 1 cup Blueberries (fresh or frozen)
  • 1 1/2 cups Raspberries (fresh or frozen)
  • 3 tbs Raw Cacao Powder
  • 1/4 cup Coconut Water

  • 1/2 cup Granola (I used Mrs Flannery's vanilla & cocoa - found in the bulk food section)
  • 1 Banana
  • Handful of Blueberries
  • Shredded Coconut
  • Cacoa Nibs (not pictured - I usually always use these but I had left my bag of them at work)

From here it is literally so easy, all you have to do it put all the Acai mix ingredients into a blender and blend on high for 60-90 seconds.

I made this in the middle of the day when it was pretty warm so my mixture came out a little bit runny, I should have used frozen bananas to keep it thicker.

I scooped the mixture into ziplock bags, laid the bags flat on a tray and then put the tray in the freezer. Now they are ready to just grab out of the freezer, top and enjoy!

Hope you enjoy this recipe.

Love Lucee xx
