CHRISTMAS RECIPE: RICE KRISPY CHRISTMAS TREES

I am back with another Christmas recipe thanks to our work 12 days of Christmas! This 12 days of Christmas recipe is by Erin & I just LOVE this creative & festive recipe! Everyone was so impressed with how good it looks & it was also so delicious especially the 'Tree Stump'!!

Tree (makes 24)

  • 3x 125g bags of Pascalls marshmallows (or 200g of plain white marshmallows IF YOU CAN FIND THEM)
  • 6 cups of rice bubbles
  • 5 tbsp salted butter
  • ¼ teaspoon salt
  • Green food colouring
  1. Separate the pink marshmallows from the white!
  2. Melt butter in large pan on low heat
  3. Add white marshmallows and stir continuously until melted and smooth
  4. Slowly add in green food colouring until marshmallow mix turns a deep green, keeping in mind it will appear lighter when you add the rice bubbles.
  5. Take off the heat
  6. Stir in rice bubbles one cup at a time until evenly coated with marshmallow mix
  7. Divide mixture evenly between two 12 capacity muffin tins
  8. Dampen hands with cold water and press down gently on each one
  9. Refrigerate until set


Tree stump
  • 6x mars bars , roughly chopped
  • 4 cups of rice bubbles
  • 90g butter
  1. Melt butter in large pan on low heat
  2. Add chopped mars bars and stir continuously until smooth
  3. Remove from heat
  4. Stir in rice bubbles one cup at a time until evenly coated with mars bar mix
  5. Dampen hands with cold water and press down gently into a square cake tin
  6. Refrigerate until set
Assembly
  • ½ block of white chocolate
  • 1 packet of smarties
  • Hundreds and thousands
  1. Loosen edges of marshmallow slice using a butter knife
  2. Place on a tray in a pyramid shape
  3. Turn out mars bar slice and cut into a rectangle proportionate to your pyramid
  4. Break white chocolate into squares and microwave on high for 45 – 60 seconds, stirring halfway through
  5. Drizzle white chocolate over the marshmallow squares to resemble tinsel
  6. Sprinkle white chocolate with hundreds and thousands
  7. Add smarties to resemble baubles
  8. EAT and wash the green from your hands!


If you are feeling very enthusiastic (and don’t have to transport your trees from home to the office) you can also assemble as a vertical tree using toothpicks to stabilise.
